Exactly!
During my service life we often had steak on the "menu". If you were lucky, and the mess was really busy, you got one that "wasn't quite cooked".
What a joy that was, compared to the boot leather that was the norm for steak.
Some years later, a "previous girlfriend" took me to Vlados Steakhouse in Richmond for a birthday dinner.
The entree was what we now call a "charcuterie", which I devoured with glee as she didn't want any of it.
The waiter came along with perfect timing as I finished and asked if I had chosen our meal, "Yes" I said, so he turned to Madam "And what is your choice?"
"I can't see anything vegetarian" was her response.
Luckily I had a mouthful of rather nice shiraz, so I only chocked mildly.
"What would Madam's preference be?" asked the polite young man.
"Oh, anything vegetarian".
With that he turned to me.
"And you Sir?"
"Your best steak thank you".
""Excellent choice Sir. How would you like your steak, rare, medium?"
"However the chef thinks it should be" was my reply.
Mere minutes later a perfect steak landed on the table. The side dish was a tiny bowl of cabbage or something (I don't remember eating it).
The steak was an epiphany. The most perfectly cooked, tender, delicious steak I had ever tasted!
The lady hadn't been forgotten either. The staff had gone down the street to a vegan restaurant and presented her with a beautiful assortment of vegan food.
So I've never forgotten that perfect steak, and the lesson on cooking a good steak has stayed with me to this day.
Never forgotten the night that followed either .
