That's mate (mah-tay)...common drink in central and south America. A bit like tea.

Yes, it was Mate minus the Ma to get the tay sound. The grow it in California in near wear I live and sell it in bottles like ice tea.

Small wonder I didn’t have a clue! I may have sampled some of that, several years ago. A Chinese friend gave me an Oriental soft drink in a can, with “stuff” floating in it. I nearly 🤮. I didn’t finish it! Try my rebus (above) about yet another local delicacy! Good luck with it!

It tastes similar to regular tea, but more bitter in my opinion.

I admit, I had some assistance from Google. We eat fiddle heads (young ferns) in the NW US, but I didn't know where. I saw the outhouses and googled "fiddle heads johns" is that cheating?

Well done @wagudc and @Transitus Rocky Mountain Oysters it is! I hadn’t heard about sheep’s knackers, but I know they operate on the young male cattle with a carpet knife! snap on a tight elastic, then “snick”, instant Rocky Mountain Oysters. I attended a round up several years ago, where they were turning bull calves into steers, inoculating and branding. A different experience for a city slicker. They cooked the knackers right there, and many of those from the ranches around indulged in these tidbits. I stuck to steak. The teen aged girls did the knackering! Is there no shame?

A few photos from a round-up and knackerfest out here on the prairies of Western Canada. Cowboys from miles around load their quarter horses into their stock trailers, and descend on the site. Mothers are separated from their calves, and you never heard such a racket in your life! Then the fun starts. The steers get the worst of it! Knackered, branded, inoculated, all in one brief moment in time.
