I mean, not including any special editions, gold editions, racing editions etc. Just how many generations of speedmaster have their been in its direct lineage?

Here is a good read. It only covers 321s and 861s. After those there are about 5 more (depending on your definition!).

By my count there's been 7 generations. The original broad arrow, alpha hands, Ed white, first moonwatch, 861 movement, 1861 movement and now 3861 movement.

Your example of 7 doesn’t take into account more minute changes and where you draw that line between a minor change and a ‘generation’ will inform the answer.
At the extreme end of the scale you could say each reference or sub reference is a generation but the changes can be fairly subtle to non existent.
Then again, it could also be said that there are generational changes within reference as the 2915 starts off with broad arrow hands and a steel bezel and finishes with alpha hands and a black bezel.

The reason I asked is because omega themselves said that the 3861 is based on the 4th generation of speedmaster, which made me wonder which generation were currently on.

You will get many different answers as it depends of the definition of what is a 'generation'. The production of speedmasters is running continuously for 65years so it has known many variations, evolutions.

You can check as mentioned Speedmaster 101 website to start with or buy the Moonwatch Only book for a larger/deeper review (594 pages !)

Edit : just saw your post related to Omega own calculation. Fair point but I guess this is still debatable, their 'Marketing/Com' team does not surely want to send a too complexe message to the market 😀 The OF population can be a little bit more sensitive to what others would consider 'details'😗
