At this stage of history, holding a grudge with watch manufacturers is akin to holding a grudge to todays German citizens because of what their grandfathers/great-grandfathers generation did...and let us not forget that literally since then, until now, there are 'wars' being waged all over the world (will not name any names, don't want to get banned or drift this thread) by certain countries ... and the watches their military were issued are not frowned upon ...
Regardless, I love that bronze stowa 😀
What I dislike is the whitewashing now occurring when a watch like the one below is marketed as a « Mark XVIII », meaning they’re claiming the legacy of BRITISH pilot watches while selling a German design.

·If you can stretch the budget a little and don’t mind a manual, could go for a Nomos Club. Jura Watches currently have it at 20% off, so works out at £864 and they also have the Max Bill automatic at £756, which as others suggested could be a good option too.

·I'd suggest looking for something vintage, since you can find a lot of less sought after vintage watches for very little money. For example, I think the IWC Cal. 89 goes for less than 700 pounds. There are also lots of Omega time-only dress watches that sell for that much. You may also want to look at some cool vintage Seiko divers. I'd suggest going on Watchrecon.com and searching for a bunch of stuff and sorting by price.

·If brand new then a Seiko 5 is undeniable bang for buck.
I don’t recommend vintage as a gift, unless the receiver truly appreciates the character and service issues that go along with them. I second the vote for Seiko, as there are many choices. Seiko is a very well respected brand in your father-in-law's generation. You will find one that suits his style and is good for all occasions.
