    I made sausage this week.

    Goose,Duck, and pork.

    I had some sausage meat left over, and used it tonight.


    Pheasant breast, stuffed with spiced, chopped, prawns, wrapped in sausage meat.

    Was given some Arabian truffles today - or kamah.
    Very much in season right now.
    Also called thunder potatoes because apparently they like a good thunder storm before they start to poke their heads through the sand.
    Very nice sautéed with a little butter and onion and braised in chicken stock.
    Tastes like a cross between a truffle and an artichoke.

    Cabbage with Potatoes ,carrots and lightly seared onions and fried paper thin slices of polish sausage.
    I place the cut up potatoes on the bottom of the pot with carrots and onions as the next layer then the Cabbage . Fill the pot with bottled water and set it to cooking.
    Then while its cooking I slice the polish sausage and fry it in a skillet.
    When the cabbage looks right, cooked but not too soft, I add the sausage and reduce heat to let the whole thing simmer awhile.

    Makes for quite a meal. leftovers if any can be boiled with more water the next day as cabbage soup.

    Serve with Corn bread made with egg, milk and butter. One egg per pan is enough and not too much milk. About half milk and half water. If you don't add water to thin the milk the texture is not good.
    I melt two or more tablespoons of butter in a cast iron skillet . I coat the skillet with melted butter then add the rest to the batter.
    I use a little salt but never add any sort of sugar or other sweetener. I never got the taste for sweet cornbread like you find in the Carolinas.
    Once baked honey goes very nicely with cornbread.
    With butter already baked in there's no need to add any but that's up to personal taste.

    The bread I bake goes great with anything from Chili to Beef Stew or any vegetable. Most like it as a treat just by itself and Dogs go bananas for the leftovers if any. You can also crumble leftover bread in a bowl and add milk for a breakfast treat. The butter makes all the difference

    Pizza! topped with prosciutto, rucola and fresh parmesan... is amazing how some of the most simple things in life can be so good (when done right)

    Having Bacon Lovers Turkey breast club sandwiches. How they cross bred a hog and a Turkey is a obscene mystery, but it sure is good. Using 15 Grain whole grain bread, closest to the old style Roman Meal bread I can find locally. Using ultra thin sliced White Cheddar. Lettuce, Tomato, Mayonaise of course.
    Should have gotten a fresh jar of dill chips but forgot. Have Potato chips and choice of bean dip or French Onion.
