Ms JIO just knocked up a Pear tart Tatin for Sunday evening supper.

Yummmmm..........can't wait until it cools down a bit.

Always prefer a tart as hot as possible 馃檮

I managed to find beef ribs at the store the other day that are actually cut from the Rib-eye roast and weren't mutilated by making them shiners with deep V cuts taking out all the meat. Only $2.99 a lb! They only had one half rack, but they are currently out on m Broil King Keg getting the low n' slow treatment. I'll update with pics in a bit when I go out to check them.

Might as well add some pictures:

They were amazing. The only issue is that there weren't enough of them!

Oh I know, but this was all they had! Never seen beef ribs with this much meat on them in the grocery store. I took what I could get.

Next time buy a Standing Rib Roast. Carefully trim off some of the fat from the fat cap then cut the roast off the ribs leaving as much meat on the ribs as you like. Then you can then cut the fat cap off the roast and cut Delmonico steaks as thick as you like. However I trim the fat cap down a bit and leave it on and cut simple rib steaks. Amazing what you learn after a few decades in the restaurant business 馃榾

FWIW: I've owned dozens of cook books and magazines but Cooks Illustrated is the most fool proof 馃榾

They're very persnickety but worth it. I've made their cauliflower soup and chocolate chip cookies and both of those are super good. Cook's Country is also very good but I've only made the smothered pork chops from that.

As you know, the same people are responsible for both. They also have two cooking shows on Saturday morning: America's Test Kitchen and Cook's Country.

Oh yes. I love ATK even more with Julia and Bridget as co-hosts. It's completely changed the tone for the better, I think.

If you want a fun drinking game, drink every time Julia says of course.

Last night was Souvlaki with veggie skewers...

And in the process of moving the veggies to the BBQ, a marinade accident occurred, so Raven had some dumped on her head. Good thing Remi was there for the clean up...

But Raven still smells like garlic and lemon.

Nice Veggie Panini with a side salad at Max Tavern. Right next to the Basketball Hall of Fame in Springfield, MA. A very cool place if you're interested in the history of the game!
