I am duly impressed that you are actually having to put a pot on the stove and are not having nuked Velveeta Shells 'n' Cheddar. The best thing I've made lately was Cook's Illustrated's recipe for classic stuffed bell peppers, which I'd never made before and have hardly ever eaten. They were a lot of work but were very tasty.

As they say "pics or it doesn't exist" so I guess your dinner doesn't exist. Due to unfortunate circumstances(working until 20:30) I was unable to join the family for dinner. However they did not skimp out on bringing me a variety of gourmet Burgers as leftovers. I already ate most of them but here's a "peanut butter bacon fried egg" burger. The photo barely looks appetizing but don't let it fool you. It was phenomenal
