I was just going to reply the same - I tend to say "honeycomb", which does at least sound a bit better than "waffle", but somehow for those partially structured examples I've only ever read "partial waffle" or "half waffle". Anyway, I'm all open for more eloquent suggestions, especially as a non-native speaker of English, but I've always connected "Cloud De Paris" to a different structure, too.

If they can be both how to you tell them apart?

That’s two very distinct styles in my book… guilloche is interwoven, hobnail isn’t.

A "faux guilloche" pattern is impressed or stamped on the dial, so it won't be as detailed as true guilloche, which is actually cut into the metal of the dial with a rose machine or a guilloche machine.

Learning as I go along - I used "pattern" just as a descriptive of the final product.

Just came back to post my finding ...Summery
Clous de Paris is a special type of dial guilloche or embossing, resulting in small square knobs. It is also called Paris hobnail or simply hobnail and is found, for example, with the watch model Audemars Piguet Royal Oak.

One of the most famous watches to use Clous de Paris as its signature design element is the Patek Philippe Calatrava.

Nice, thank you! That confirms the Alpha hands to me, although my doubts were very limited anyway.
