I was just going to reply the same - I tend to say "honeycomb", which does at least sound a bit better than "waffle", but somehow for those partially structured examples I've only ever read "partial waffle" or "half waffle". Anyway, I'm all open for more eloquent suggestions, especially as a non-native speaker of English, but I've always connected "Cloud De Paris" to a different structure, too.

Does this mean that Hobnail dials are classed as Guilloche or faux guilloche?
If they can be both how to you tell them apart?

That’s two very distinct styles in my book… guilloche is interwoven, hobnail isn’t.

Clous de Paris is a special type of dial guilloche or embossing, resulting in small square knobs. It is also called Paris hobnail or simply hobnail and is found, for example, with the watch model Audemars Piguet Royal Oak.
One of the most famous watches to use Clous de Paris as its signature design element is the Patek Philippe Calatrava.
