I know that most of our watches are stainless steel, but stainless isn’t immune to corrosion.

I can answer that. Austenitic Stainless (3XX and 9XX series) has enough chromium to be self passivating, which means the chromium reacts with oxygen in the air to form a hard and corrosion resistant layer of chromium oxide. However, it needs constant exposure to oxygen for this to continue. If exposed to electrolytes and an oxygen-poor environment, it will corrode.

So, what does this mean? In normal use in the air, it won't corrode, as demonstrated by almost all normal applications. However, in seawater and in an environment where the seawater is stationary, it can deplete the seawater of enough oxygen that corrosion overtakes passivation and then the underlying iron corrodes.

While structural corrosion is uncommon, it will stain. Stainless diving equipment is a good example. I remember diving with a buddy who brought a brand new stainless dive knife on the trip. After several dives, it developed a stain where the steel entered the molded handle. I have several fastener applications in my diving kit where there's a rust stain on the surface after many dives.

I seriously doubt leather will cause corrosion as there's still plenty of oxygen in the air to keep the stainless passivated. Imagine the grief you would hear on the discussion boards if this was not the case.
