is that time of the year in the northern hemisphere! time to get the grill going! so we laid a few Argentinian langostinos & couple of sockeye salmon steaks on the hot grill grate to enjoy with a classic Riesling

Mango and avocado salad...started with a dressing of flat leaf parsley, lime zest, lime juice, garlic, salt, pepper, olive oil, and a habanero...



Marinated thin mango slices in that for 30 minutes...



Added sliced avocado, more of the dressing, then some cherry tomatoes with some dressing, and sea salt...



Very tasty.

Ah ! The Nica is better 馃榾

Now, the key is the type of red beans, small red one (softer than the Mexican ones for example). Once cooked (boiled) than you should stir them with some onions, red pepper, a bit of garlic. You cook the rice on the side, and then you add the rice to the beans so it takes the colour.

Some good chile and you're set 馃榾

I think my issue is with the flavour, I can't get it to taste quite the same. maybe I'm not adding enough onions/garlic+cilantro?

If you run out of cilantro, you can always substitute...

Salmon roasted with lemon and garlic, with roasted potatoes and sugar snap peas. A little feta to top it off.

It鈥檚 been a bit since we had a pizza night. I used a roasted red pepper sauce as a base. One with pecorino Romano, fresh mozzarella and basil, the other with parmigiano reggiano, fontina, shallots and chorizo.

As happens most nights for the past few years, I'm taking my dinner in liquid form. Tequila tonight but usually whiskey. A lot of scotch seems to fill me these days.
