Spaghetti alla'Amatriciana. I couldn't get guanciale, so I used smoked slab bacon instead. My apologies to our Italian friends - I'm an uncouth American. It was mighty tasty nonetheless.

One of my favorites! If I can’t get guanciale I’ll use pancetta.

Home Made Chicken Noodle soup.

Well, other than the prepackaged egg noodles, and spice mix. And the leftover chicken from a local eatery. And more spices from the Spice Lab.

And the filtered water from the delivery guy.

Other than that, it is Home Made

Although à proper celebration is upcoming this weekend, today, my wife and I are celebrating 40 years together. Her request? Soupe à l’oignon. I slaved all day caramelizing 10 pounds of onions and making a few litres of stock. Long live the onion! And love…
