Cacio e Pepe last night...very simple with just a few ingredients...





One of my personal favorites - very simple and satisfying.

We were both thinking pasta yesterday ... I slow cooked Bolognese on the stove all afternoon. The whole house smelled wonderful. Served over fettuccine.

My wife left me with the kids so she could have a girls night.
So me, being the Gordon Ramsay of the family, prepared a pot of Kraft mac and cheese, chicken nuggets and peas.
It was delightful.

Night before last it was Thai chicken cashew stir fry with rice...



Last night I made some chicken schnitzel...

The "knoedel" sliced and pan fried - hmmmm..

For the dough you can add 100ml of warm milk to 600gr of bread to get the right consistency.

Made some French Canadian style pea soup yesterday...



Dried yellow peas, a bit of rendered pancetta (drained off excess fat), carrots, onions (we didn't have any celery or I would have added that too), along with thyme, savory, bay leaf, and some S&P...add water...simmer for a few hours...



No need to soak the peas ahead of time, although many recipes call for this. Just rinse, check, and cook. Several hours later....removed the bay leaf at this point.



And after the boat motor went for a dip...



Very good! The savory makes all the difference in this recipe.

Last night: veal saltimbocca with roasted potatoes. My wife made it and it reminded me of having the same dish at an Italian-American restaurant in Connecticut in my younger years.


Tonight: Mississippi roast. Pics to follow ...

Some recent meals, starting with lunch and a Caprese salad...



Made some fast food style burgers, so made the special sauce as well:









Crispy patties made thin in a cast iron pan. And some fries too...



Roasted a chicken on Sunday...



I put a little rub mixture on it near the end - love those crispy wings...



Brussel sprouts and a tomato and onion pie as sides:



And leftovers are sometimes made into a chicken pot pie, but this time I made some soup, which I'm having again today for lunch as soon as I finish this post:



Simple stuff, but tasty.

Your rotisserie chicken makes me want to get the big Faberware Rotisserie/Grill from the basement and buy a duck and a beef roast....

Forgot to take pics of the Mississippi roast. It was great, trust me.

May 1st, Mrs. Flw and I teamed up to try making an Indian curry from scratch. The recipe was for a chicken pistachio korma.

We shelled and boiled about 6 ounces of unsalted pistachios, and processed them with cream and chopped peppers. The recipe called for Kashmiri green chillies, but the closest thing we could easily get was Serrano peppers. That made a paste, which we laid out with other spices by the stove as we started the pan with onions.



Then we added the chicken, and browned it with ginger, garam masala, yogurt, tomatoes, and garlic.



The final result, with basmati rice:


I have to admit that I did something impulsive: I figured that eating a Serrano would add to the experience. I was right!

So, another recent meal was this Faroe islands salmon, which is amazing...we marinade it in soy sauce and some maple syrup...



Last night we made filet of beef, seared in a cast iron pan on the BBQ, with a bourbon bacon sauce, roasted red peppers with goat cheese, and some saut茅ed mushrooms that were simmered in our home made beef stock...



This was the bourbon used...yes I know, but it's the only one I have.



The wine was this:



Very small production as you can see, so 219 cases total, and when we got this back in 2019 you had to be a member of a wine club, and were limited to just 2 bottles. This wine won some awards back in 2018, and became quite sought after, so we got our allowed 2 bottles, and this was the first we have drank. After decanting for an hour, it was wonderful...



Also made some home made snacks yesterday similar to bits and bites, but with a ton less salt...



Cheerios, Shreddies, Rice Chex, some pretzels, mixed with onion powder, garlic powder, some olive oil, Worcestershire sauce, mixed and baked on low heat for about 2.5 hours, then we add in some honey roasted peanuts:



Also baked a cake...yellow slab cake from scratch...








Home made chocolate icing made with 70% Lindt chocolate...
