Made some Greek flavour inspired chicken last night...marinated with olive oil, garlic, thyme, rosemary, coriander, lemon peel, some salt, then roasted in a frying pan...



Olve oil marinade in the pan had some lemon juice added, and made a nice sauce...

That looks outstanding! I need to bookmark this and try to replicate it ... great idea.

I'll put it here for anyone who wants it...

2 Tbsp Fresh Thyme roughly chopped

2 Tbsp Fresh Rosemary roughly chopped

6 strips lemon zest - use peeler to remove strips, then chop

1/2 cup Olive Oil - or enough to coat chicken pieces

Mix the above together then add:

5 Cloves garlic - coarsely chopped

¼ tbsp kosher salt

1.5 tsp Dried Oregano

1 tsp ground coriander

1.5 tsp red pepper flakes

1.5 tsp black pepper

Mix together

3 pounds chicken parts (or just go with breasts)

Score chicken ½ inch deep slashes across then toss the chicken into the marinade. Cover and refrigerate for up to 2 hours - do not go more than 2 hours because the salt will make the chicken way too salty. We did 1 hour Marinating only and that was enough.

Preheat oven to 425 F. Put chicken into cold broiler safe skillet. Put in preheated over for 30 minutes uncovered until cooked or until it hits 160 F. Spoon pan juices over the chicken then put under the broiler for about 3 minutes - keep a close eye on it. Rest chicken for 10 minutes then put on platter. Add 1 tbsp lemon juice to the pan juices then pour over chicken and serve.

It was very flavourful. Enjoy!

Beef cheeks. I think the most popular recipe is to slow cook them in red wine, which are great btw, but this time we decided to change the wine for dry white.
Stewed in wine, onion and garlic. 4 hours later they are ready - the fibres are fragile and juicy.

I bet it’s cos you can’t afford’em. It took ten whole octopuses to get enough balls for a batch of 20 😁

If I don’t want it I must not be able to afford it....did I accidentally stumble onto TRF? 😀

I’m generally not a big seafood person...but I’ve had octopus, squid tubes, etc. Before. Just not my thing...

Tried our hand at making Tadka Dal last night...

First, we made some Ghee...simmering the butter...



Straining out the slightly browned milk solids...



Liquid gold...if you have never had this, you really need to try it. The flavour is off the charts good...



Simmering the lentils with water, ground turmeric, and fresh ginger...



Ghee used to sauté some whole mustard and cumin seeds, then some onions (the smell at this point is amazing)...



Add in some sliced garlic, chilis, and since we didn't have fresh curry leaves, we used Kafir lime leaves instead.



Wilted some spinach into the lentils, then served it over some Basmati rice, and the onions chilis added...



Needed some hotter chilis, and we maybe cooked off a bit too much water on the lentils, but it was still good!
