Made some Lasagna and Zuccotto (italian dessert for Christmas time) a while ago during the second Christmas day... In Germany the 26th is the so called Second Christmas Day.

I neglected to take any photos of our lasagna 😟 Mixed some spicy sausage into the meat mixture; it spread the spiciness through the whole thing.

I had a Jersey Mike's #3 on rosemary parm. Our local chain keeps making the portions less, so the hell with them, you've lost my decades of loyalty.

Is it a franchise operation? Could just be the franchise owner deciding to do this in order to help keep afloat. The most convenient Subway location near my office was owned by a guy who was a real penny-pincher. I finally stopped going when the ham on my sub had very obviously expired. I swore off Subway, but some other people in my office typically stopped at a different one, and the sandwich quality was head and shoulders above the close-by one I had been going to.

Yes, a franchise of Cousin's Subs, mostly found in Milwaukee and Phoenix (of all places), and it's possible... I haven't checked other locatkons. But when a single portion of Jersey Mike's equals a double portion of Cousin's, well....

So the lasagna we are making to freeze as we like having portions we can just stick in the oven when we don't have time to cook something. Lasagna always tastes better the second day anyway. 😀

The sauce...



Some filling...



And baked - cheddar, provolone, gouda, and ricotta in this, and when we bake it again to eat, that's when we put the top cheese on...



Last night had a steak...with some sides...

Made some balsamic glazed baby onions...simmer them in some water, olive oil, touch of butter, and white wine...



Once that is almost evaporated, add the balsamic...



Then slowly cook down until that is reduced...



Filet in the cast iron pan, then put into the oven...



Also a few mushrooms, and some green beans...

I suppose I could call this "dinner" from last night, or maybe it's more accurate to say I skipped dinner and went only for dessert? It was my birthday and for the first time in a long while my wife's schedule did not line up with mine. Neither of us really had time for dinner and we really only had a couple of hours together later in the evening so she took me out for some ice cream. I love mint chocolate chip and this is a double of Salt and Straw's Freckled Mint TCHO-colate Chip that we shared. It was excellent! For those of you unfamiliar, this place is sort of known for their monthly unique concoctions but they have a standard menu with the more ordinary type flavors you'd expect too.

Last night: French onion chicken with mashed potatoes and peas.


Tonight: pan-fried flounder in lemon and white wine sauce with seasoned rice. Pics to follow.

Mostly leftovers, lasagna from yesterday and flan. But homemade, I always reheat the lasagna on a pan, I love the cheesy crust.

Looks fine to me. We in Wisconsin are masters of the Friday Night Fish Fry, and while not Friday, yours looks pretty good!

Was a bit lazy tonight...portabella ravioli with vodka sauce and roasted baby asparagus. We were hungry, so no pictures, sorry!

Oh, dessert? Chocolate mousse paired with a peanut butter whisky! We had seconds of that!

We were introduced to the peanut butter whiskey in November and still have a little left in the fridge.

Well maybe a little less now, as this made me go pour a glass.

I noticed there are quite a few shops in the LA area - will need to get out and try a scoop ..... peanut butter strawberry crumble or bourbon and caramelized honeycomb -- decisions, decisions!

Thank you! I've been enjoying the Tillamook TCHO double dark chocolate gelato for the last couple years and honestly not paying much attention to Salt and Straw in that regard but my wife noticed they had mint chocolate chip + TCHO and figured it would be a winner for me - she was right! Also great they were open until 11PM 😲 on a Monday in January so there was actually time for a late night birthday dessert... over the years I've gotten so used to places being closed for the holidays or inventory, etc, etc. We decided to keep it just to the double and resisted buying the pints to-go but I think we're going back soon to grab them - I'm liking the sounds of the two you pointed out. If you try them, be sure to post your feedback!
