Here is the new guideline for cooking pork. some people like their steak well done as well (not me). as long as you achieve 145 you are good and if you like it more well, i would leave it in the oven for another 20 minutes.

Made this last night - hash browns and eggs...

Grate a couple of potatoes, and an onion, squeeze out all the moisture you can, mix in some cayenne, heat some olive oil in a pan, and put the mix in:



I add just a few small bits of butter around the edge of the pan, and when you get a good crust, use a plate to flip it:



Crack some eggs on top:



Into the oven:



In about 8 or 9 minutes, it's done:

Christmas Day: the main course is roasted beef tenderloin with horseradish sauce, Yorkshire pudding, twice-baked potatoes, and asparagus.

The dessert was an English Christmas pudding, which my wife made from scratch; a triumph on the first attempt.

Have the normal meat feast for lunch but we have a vegan dinner Christmas evening as Mrs STANDY is vegan

Was my turn to cook this year.
This hearty vegan mushroom pie is a crowd-pleaser - a rich beery gravy with thickly cut chestnut mushrooms and nutty puy lentils.
Great with mashed potato



Doesn’t touch her last years prepared spread ( which I did enjoy immensely )

Not a good picture but we had King Crab legs, ribeye cap steak, potatoes, carrots, brussels sprouts and strawberry cake for dinner tonight.

So due to the whole Covid buggeration, there was no traditional Xmas feast for me yesterday. No problem. Made myself a yummy meal today. Chicken stuffed with mealie wrapped in prosciutto, parmentier and mashed tatties, pigs in blankets, yorkie, gravy and some random green things. Went down a treat. Happy Boxing Day all ✨️

Part of a tradition for the Christmas to New Years time for us.



As part of dinner tonight, Alaska Red King Crab from the Bering Sea. My wife and I could only finish 4 legs (3 lbs) so the remaining legs will become crab cakes for later this week. Nice to be near the source

We had a large prime rib in the freezer that we had bought for a dinner party that clearly wasn't going to happen, so were looking for a way to use that up as it's far too big for the two of us. Looked at several recipes, and settled on an Austrian Goulash of sorts...



Browning the onions...



Beef has been spiced:



Added some flour and some caraway seeds to the onions...browning this for the roux...



Now heating the other spices through - Hungarian paprika, some cayenne, and a bit of smoked paprika:



Added the beef stock, and tomato paste:



Adding the beef, some bay leaves, and some marjoram:



Ready to go into the oven covered for the first while:



After 2 hours, looking good:



Left the cover off for the last 45 minutes or so, to get some deep browning - saves having to brown the meat first:



Quick taste test:



Served over pasta, after stirring in a little cider vinegar to give it a touch of acidity, and then sprinkling some chopped dill on top:



And a nice red to go with it:



Bunch left over for a few more meals, and it was very good!

Made one of those Wednesday night. First time my son (7 yo) has participated. Cooked it Wednesday night and threw it in the fridge on Thursday morning. Should hopefully be well melded when we heat it up tonight and dig in. I should note that my son totally lost interest by the second layer of the build... 🫨

Had a light late night dinner to ring in the new year. Started with charcuterie, followed by a semi sweet hazelnut cake and finished with a simple ham cheese and eggs for early morning snack before calling it a night.
