Most any decent jeweler or watch shop can remove normally non-removeable links from a beads of rice. All it takes is gently prying open the center links. Done it many times for my wife.

If it's this easy, then really all the OP needs to do is make sure of the end-links. @ConElPueblo suggested #11.

Yep the end links will be the most critical. The bracelet itself can be carefully manipulated to fit.

The watch would pair well with a nice generic mesh gold plated/gold bracelet if you’re leaning towards a bracelet over a leather band. Just don’t buy a bracelet with stretch/expanding end pieces! Here’s an example of a gold bracelet that I had on a vintage Constellation.

I would definitely consider a generic mesh gold bracelet like this one! Do you know where I could get one? Also, would the end link #11 still apply? That watch is stunning!!!!!!

The #11 end-link is specific to Omega bracelets designed to fit the curvature of the case. The bracelet that @Vanallard showed has straight ends, so they don't need to be custom fit to the watch, but as you see, there is a gap between the bracelet and the watch. It's a totally fine vintage look, just different.

Yes. You can even see that the current strap says "18".

When you change out the strap, you should install new spring-bars as well. Don't re-use the old ones. They are probably pretty worn out and corroded, and it's a good practice to change them every so often.

You should follow your heart and so it sounds like the gold colored bracelet might be right for you.
However, and in the event you'd want to change a bit, and since you say you love black, I would agree crocodile would look very nice.
I would recommend a flat strap, matte, more subdued than a shiny strap.
You can see a blue version on one of my watches in the thread @wagudc posted.

PS - completely agree on that watch, but be careful you might end up on a slipery slope here.... and get piqued into pursing much more than just a bracelet or a strap !
