·As I understand it, a well maintained watch should really only need a mainspring and possibly case parts at service (crystal, pushers etc) and there are plenty of these floating around the open market to allow independants to work on 321's for the time being.
After that, or if you have a watch that needs a repair rather than a service, then Bienne may be the only option. If your case, dial and bezel are in good knick, there's a chance Bienne will leave them as they are. If not, you may have to go to the effort of having a watchmaker remove your original dial, bezel etc for service items, then send to Bienne for repair, then back to you watchmaker to re-fit the correct parts, probably voiding any warranty. Good eh.
