I came across this in Buenos Aires. I've been thinking about a Pepsi or Coke for a while. The store said it bead a 16710, but it had a quickset date, so I'm wondering if it is a 16700? They were asking low $5k. No idea on last service. I will ask them about that.

I'm not a Rolex expert at all, and here's the little I know based on being a 16710 Coke owner.
1. For a 16710, it does have a quickset. The dial should read 'GMT Master II' tho, so the 'II' is missing in this Pepsi. So it's not a 16710 as you've rightly suspected.
2. So if it lacks a 'II', and if it has a quickset, that means it could be a 16750 or 16700. Or maybe a franken. I don't know enough to make further identification beyond that. But your instincts were correct - it's not a 16710, or at least not one based on the dial, AFAIK.
Not sure how this would be perceived by your seller, but I've done 3 deals where the watch was sent first because of unknown / low count forum members. It does not hurt to ask? J
The watch pictured is in a bricks and mortar store in Buenos aires (here on holiday). I just don't know enough about Rolex/GMTs to pick a franked/replacement dial, etc etc.
