Maybe it's some blue vein cheese you should be getting your hands on 😗

Ahem....

I think the words "blue vein" and "cheese" should always be mentioned with caution. Especially in bloke gatherings. The results can be scary.

And at risk of offending our cousins across the sea, they need to rename their solidified dairy/psuedo dairy product to "Yellow Stuff".

Nice cheese but looks to be 12 month aged. If it was a 24 month age it would be more valuable. Even more if you had the original wrapper.

But seriously, to the OP: You're really, really lucky to find a piece like this. Most of these got melted during the 70's when melted cheese prices were at their highest. No-one seemed to care for the Swiss works of art, they just wanted to get their fondues up and running 🙁

I think this cheese has been reholed. I have seen similar cheeses but the holes were in a slightly different position from your cheese. If you look at the bottom of the cheese there is a number that can identify the exact same cheese, you can compare yours.

If that's a reholed cheese, I want to know who did it! I have a bunch of cheeses lying around that I never use as they have gone slightly, ahem, tropical 🤮

And do not try to open the cheese without the proper tools and a good portion of knowledge. Get it to a real cheesemaker - he knows what to do.

I think it's worth doing some homework first if you're looking to invest in some cheese. You should get the book JUST SWISS CHEESE. Lots of good info and little known facts about the intricacies of aged cheese.

That said I get most of my cheese from strangers on the Internet. Cheaper than in the store..
