A while ago I was talking to salesperson at the local high-end watch shop that sells this brand, amongst others. His dad was a watchmaker and that he learned watchmaking from him. He said it's difficult to design a mechanical watch where several numbers move at once, gesticulating that the torque required is high, and was impressed that ALS could achieve it.

^ i think that’s what the remontoire is for

It might be, but I thought a remontoire is a technique to maintain constant torque to the escapement mechanism.
