Apple was so OCD about the accuracy of the watch, that they set up their own NTP servers. Their claim is every apple watch second hand is in sync, and they are 50ms at most off from UTC. "Stratum One" accuracy. The watch also has a temperature controlled crystal for adjusting timekeeping functions, making it more accurate than the iPhone.
