About 40 years ago I built a passive cellar at the home of my parents--cooled by evaporation. It worked beautifully. But at one point, ten years in, we tasted something off in one of the bottles. Opened another. Same thing. Opened a third. Same bloody offness! Finally, we figured it out: it was a few cardboard boxes in the cellar--the humidity drew out from them a strange cardboard odor that every bottle breathed in. We pulled out the cardboard and in a few months the wine recovered.
Moral: never put cardboard in a wine cellar. If you have mold, you have a problem, and should address it--it shouldn't be a problem at 60% rh--so maybe put a gauge in your cooler in addition to keeping the bottom rod empty?
