Which moon watch should I buy?

IMHO if the budget is around (of course price is condition / seller dependent):

1. 3.5k usd or so, cal 1861 FOIS or Regular Speedy Pro

2. 4.5k or so, neither step dial nor DON cal 86x 145.022-76/78 or 359x or 357x

3. 6k or so, cal 861 step dial but no DON such as 145.022-69/71

4. 7.5k-9k, cal 861 step dial + DON such as 145.022-69/68

5. 10k or above, a cal 321

Then there are the LEs ...

I'd start the Moonwatch experience with a cal. 321 Speedy, because that is the true origin of the mythos.

The 145.012-67 is a very sexy watch. Not cheap nowadays, but still rising in value.

Take some time and you'll find something "in the middle", which is close to upper end at last.
