I had an item go “missing” from this process and I just got to claim the minimum of 100 dollars because it was a free label provided by eBay.

At what point in the process did it go missing? Sorry to hear it.

This is a bit wild, I was under the distinct impression that the watch is insured for the value of the sale from verifier to customer.

i was told that that its under ebays shipping and could not change the declared value. IN the 15 years i have been using ebay its happened twice just within a year. now i just dont go though authentication anymore.

The OP’s story is vague and not making a lot of sense to me, but they haven’t said it was a “watch.” Just an “item” that was lost. eBay authenticates a variety of different items at different values. From eBay:

and eBay didn't cover the sale price of the watch when it was lost in transit from the verifier to the buyer after the sale had been completed? That's directly in conflict with their stated policy. 😵‍💫

so the shoes I got the minimum 100 dollar coverage. Which I fought with them and the watch was covered. both times they made me jump through hoops because the shipping labels are provided by eBay so it is their accounts that I’m not allowed to make claims on so it was a whole ordeal.

I want to make it clear that I don't have any issue with you whatsoever, but I find the way in which this conversation unfolded a bit- well confusing isn't the right word. You seemed to be heavily implying that it was a "watch" that had this issue with eBay both during the first part of the conversation and up until direct clarification was asked for.

If this is because you just don't like eBay, I totally get that, and you're welcome to your opinion. eBay has some downsides, large seller fees, and so on. I'm not sure I'd want to try to sell a watch on there myself.

EDIT: why would the policy be different for shoes? I don't understand why eBay wouldn't just insure for the sale price. Makes no sense to me...

Makes no sense to me. That’s why I avoid them for larger prices items they couldn’t give me straight answers when I called them.

Because the more you said about eBay the less it made sense and the more contradictory it was. absolutely nobody forced you to start with "I've heard horror stories" and then move to "I lost my money selling there (implied: watch)" to finally "it wasn't actually a watch." Nobody, nobody forced you to say any of that. Nobody forced you even to respond.

Takeaway for your next forum sale attempt: your potential buyers have to trust you.

at minimum. Also, it concerns me that you don't think your prospective buyers should consider a multi-k purchase "serious."
