You should make sure the watch is fully wound. Turn the crown 40 times or so before putting it on.

Sorry, that wasn't my point. Did you fully wind it BEFORE putting it on? I presume you are trying to understand why the watch is stopping, so the first thing to determine is whether the watch is fully wound, and the only way you can be certain of that is to wind it manually.

I wound it at least 30 times before 9:00 this morning and was wearing it all day.

The same pattern is happening around 11:00, when the second hand lines up with the minute hand it stops. Once it reaches 11:08 it doesn’t stop. I think it is connected to the date mechanism being engaged, as it doesn’t happen for the rest of the day.

If it is exactly when the sweep hand passes the minute hand, they could be rubbing.

Is the second hand getting caught on the minute hand ( not enough clearance). That happened to me once

If so, why is it only happening at 10:00 and 11:00 at night, but not during the day? It is perfect throughout the day.

It can be more likely to happen when the hands are in certain orientations and also when the watch has wound down and providing less torque. Unfortunately, not all problems can be solved over the internet. We can give you some ideas, but you need to check them out. Perhaps you should take out your loupe and start making careful observations. Or you can take it to a watchmaker.

Didn’t you say this watch was just serviced? If so, send it back to STS. It’s not your job to diagnose the issue. If it’s stopping let them figure out why and remedy it under warranty

This evening it happened at 10:04 and 10:05, and then moved on.

For three days at least the watch continued to behave as above, so I spoke to a horologist in Northern Ireland who said he could fix it for more. I’m taking it to him on Friday. Would you believe that last night the watch didn’t stop at all!!! Typical.
Even if it doesn’t stop tonight, I’ll take it to him tomorrow.
