Ok, you have taken the ribbing on the chin without going postal, so here's a couple of suggestions.

Have fun searching 馃槈

Most def the new Longines railroad or the Stowa Flieger. If I had any sense I bought the Longines and sold all other watches

Why not a Seiko 5? It's not Swiss, but it does have numbers and it comes in stainless with a white dial.
And best of all, for your price range of $2500, you could have 45 of them. 馃榾

Somebody else mentioned the Omega Dynamic, but I prefer the non-chronograph version.

I rather like this:

Judging by the size of the numerals, there must be a lot of old folks in Reyjavik.

Pilot style watch would be nice
Please correct me if I am wrong here, but I thought Pilot Style implied a black dial.

I think you can still get an IWC Spitfire in LNIB condition within the OP's price range. Mouse_at_Large pictured one version above, but I think they were 39mm. Not in-house, but certainly some interesting mods done by IWC to an ETA ebauche.

The specs for the IWC Mark XVIII puts it at 40mm. Not clear if this includes the crown.

Not my cup of tea , especially the dial colour and font for the numbers, but the OP could consider an SBGH013.

But you can't deny that it has numbers on the dial, which was the request in the title, undeniably not small numbers either. Maybe the idea is that you can see them from space. Whatever, I like it.

Now those are some BIG numbers!

Because it's a BIG watch (45mm) - bigger than the 40 - 42mm stated range the OP is looking for.

Zenith does offer their pilot range of watches in sizes ranging from 40, 42, 45 and 48mm.
