It must meet all these requirements: 1. Round 37-39mm 2. Day 3. Date (month bonus but not mandatory) 4. White or silver dial (or light colored in general) 5. No chronograph 6. Not Rolex/Omega 7. Not a diver 8. Thinner is better but not a must Purposefully not including a budget - I think it would be fun to see the whole spectrum.
It doesn’t do the day you asked for but I think it ticks all the other boxes. I don’t wear mine often but when I do, I really do have a soft spot for it. I did actually go through a phase in 2016 of wearing it virtually all summer as my daily. Its very classic and beautifully finished. JLC master ultra thin moonphase

I can highly recommend a Jaeger-LeCoultre Master Calendar. Comes in 37-39mm depending on which model you get, has day, date, month and moon phase and superb finishing.

No mention of a movement requirement, so I'd throw in a Timex Weekender Cream Dial on a brown nato. Doesn't have your specified date, but other than that it checks everything else on your list with the benefit of costing <$80. I have one of these alongside a Rolex Milgauss, Omega SMP & Speedmaster etc and it still gets wrist time. Just so lovely, simple & clean. Plus I can come back to it after a month and it is still running and accurate.... (which makes me question my watch movement obsession).
