What/How many watch would you buy/have if you have 5K?

You're coming at it fromthe wrong angle imo.

I'd make a list of all the watches I'd like to own then do a huge amount of research on these models. Prioritise them (if there's any that are more desirable to you than the others), then it's a case of hunting and searching and when a good example of one of the watches on your list comes up, you pounce.

Once your initial 5k is gone, you save until you can tackle the rest of your list.

I'd have to spend about a grand or more on servicing and restorations of the best of the watches I already have, Omega Deville, Bulova, Paul Peugeot, etc., then start looking for other vintage watches I could get at a reasonable price. An older respected name brand Chrongraph would be high on my list.
A Bulova Astronaut with fully restored internals would be nice. Only if it remained accurate within original specs.

Ever tried owning one? The charm is overwhelming until you notice you lie awake at night thinking you have tinitus!

If you are speaking of the Accutron hum, I already have tinnitus, mild these days, so it might even work as white noise to cancel that out.
BTW
Melatonin supliments help quiet down tinnitus.

So does selling your hummers! Interestingly the F300s hum at 300Hz (duh) but Accutrons are at a more mosquito like 360Hz

My advice for a newbie

4k on modern Speedmaster.
$500 on a beater diver
$500 on straps to make 2 watches feel like 10 watches.
If you like chronos as many of us do, this is some solid advice right here!

If I had a limited funds, I'd definitely spring for one of the cheap Seiko divers. I wear my cheap Seiko 5 SNZF more than any of my expensive watches. I put it on whenever doing any physical activity where I don't want to harm one of my expensive watches, and often find myself not having changed it for days at a time. It looks great, works well and is worry free... (except that I should have bought 2 spares...)

As @STANDY suggested, I got some cheap straps and it converts it to a completely different watch (as with all other watches of course).

I really don't know. Never spent more than $750 USD on a watch.

Assuming you're talking about USD. I'd go with the following but you'll need to squeeze a tiny bit harder and get a few more bucks

1) 3950 Beautiful tritium Speedy (let's say $3400)
2) Tudor Black Bay (my preference is the smiley ETA but the in house is fine and cheaper) (lets say $2150)

So for $5550 you'd get two great watches.

If your wrist is smaller then maybe you'd want to avoid the Black Bay (maybe even the speedy) and perhaps go with a Tudor 58 (but you'd only be able to buy one watch then)

Is this a Brewster's Millions situation where I have to spend the 5K to get the rest? If so, I'd make a start on collecting the dirty dozen (4 or 5 of 'em).
If it's MY money though, I want either an Omega SMPc, a Heuer Monaco, a Chronomat ref 769, or an Eberhard Pre-Extra-Fort. At 5K, a Submariner 5513 or Grand Seiko SBGH213 is just out of reach.

I'll come at this from a different angle. I currently have a Rolex Oyster Precision 6022 from 1953 that I inherited, a Casio F91W, and a Seiko SKX007 with several straps. My plan is to get an Omega Planet Ocean 39.5 (pre-owned) when I can find a good deal - and that will total up to about 5-6k in watches - so that's my "real life" current 5k plan!

I'd go for one and get 145.022-xx reference speedmaster. But I could be a little biased as I have 71 myself 😉
