What do you call this dial? I believe it is not a guilloce, how is it called?

I'd say a concentric ring dial. I've seen them advertised as snail track or record dials too. I don't know if Omega has an official name.

I don't know, but that style dial with its ringed surface and full set of applied Arabic numeral markers should be called "yum!"
