Made some Huli Huli Chicken recently...

Start with pineapple juice...



Brown sugar...



Ketchup (French's of course)...



Soy sauce...



Fresh ginger...



Garlic...



Chicken stock (home made)...



Toasted sesame oil...



Habanero hot sauce...



Stir together, bring to a simmer, and reduce...add a little corn starch at the end...



Coast the chicken with it, then add pineapple rings...



Bake at 375 for about 70 or so minutes, adding more sauce half way through...



Served it with rice, asparagus, and a little extra sauce on top...



Very tasty.

Made some caramelized onion pasta last night...

Start with some onions...



Slice thinly and into a pan to slowly caramelize...



This takes a while - getting hungry...



Need some olive oil, water, freshly grated parmesan, and two egg yolks...



Onions are good...



Place all the ingredients into a bowl and blend up (I haven't added the eggs yolks here as the mixture needs to be cool enough not to cook the yolks)...



Pasta is cooked, so it goes into the pan with some of the sauce, and you slowly heat it up until it thickens...



Some lemon zest and fresh parsley on top...



This is a 10 out of 10! Takes a little time to caramelize the onions, but this is pretty easy to make and packed with flavour.

Tried a new recipe last night for Mississippi pot roast - super yum. I also made the cheese bacon Brussels sprouts from yourbarefootneighbor’s Instagram page.

Cabbage roll, pierogi, and some wooden smoked sausage.

I also hit a deli. A poke market in Kauai. Tuna, scallops, and a Kalua pork plate for my boys.

Honey garlic chicken...

Honey is needed of course - more runny honey is easier to work with, but this worked fine with a little added water:



Also need some apple cider vinegar, soy sauce, garlic of course, plus springs of thyme:



To start, I mix some flour with spices (paprika, onion powder, garlic powder, black pepper), cut the chicken breast across the middle, dredge in the four and fry in some olive oil:



Brown on both sides and remove from the pan. Then add in some butter, then the chopped garlic and brown it - careful it doesn't burn! Then add the honey, some water, vinegar, and soy sauce. Add the chicken back in, along with some fresh thyme:



Cook until the chicken is done, and the sauce is thickened slightly (shouldn't be really runny or really thick). Then serve with your favourite sides:



It only takes a few minutes to make this, and it's really good...
