NYE dinner
Lobster Dynamite, risotto, sprouts and garlic knots

Lobster is pretty easy
Start by poaching a few tails

Remove the meat and dice it, prep the shells for refilling:

Mix the lobster meat with the Dynamite Sauce; basically mayo, sriracha, garlic, lime and tobiko

Add lobster and sauce back in the shells, top with some sautéed mushrooms and onions, a little more dynamite sauce, and bake for 15min.
Bam!
Have a Dynamite 2024 OF!

Just a simple dinner of Beef and garlic chives (and of course other ingredients) Dumplings as per Chinese New Year traditions though this is of course a Western New Year and is unaccompanied by all the other side dishes a traditional Chinese New Year would entail ( in a month's time).

Christmas dinner last week. I decided at the last minute to bbq the turkey, rather than try and time everything around oven usage. Broke it down, basted it with a maple syrup and Dijon glaze, and it was perfect (minus the one drumstick I thought I turned but didn’t).

Funny I have just finished making a beautiful chopping board of Australian hardwood and I was umming and ahhing about putting a juice groove in it but you have just made my decision clearer…. Thanks 👍

Make it deep, that ‘blue’ fillet bleeds like a *! Or maybe a well in one corner?? (Which unfortunately I don’t have- lost 2 spoons of the good stuff.)

Homemade hummus and pita tonight. First time grilling the pita on the stove in a cast iron griddle, and found that it gives more control over the process.

For Australia Day we decided to have some snags in bread...not the same as Ozzie sausages, but still tasty...



We also opened up a bottle of wine we brought back from our last trip down under - a 2014 Penley Estate Chertsey...



It was wonderful...this is one of our favourite wineries in the Coonawarra region.



Also recently whipped up some home made BBQ sauce...bit like a South Carolina sauce that has vinegar to give it a good tang. I used to spend a lot of time there on business and would hit the BBQ places there, so really like this style of sauce.



And had it on some pork chops...very good...

Lamb chops and crispy potatoes. Made an olive oil/ butter/ garlic/ greek herb sauce; tossed the potatoes in it and sprinkled them with lemon, and finished the lamb chops with some of the sauce as well.

No pics, as I was scrambling to get everything done and on the table for when my wife and son returned from an evening class he had. Dinner was for the three of us, so not just me and the Mrs. We did have glasses of champagne, though (and a shot glass of champagne for our son).

Pommes Boulangère...caramelize the onions...





Thinly slice some potatoes...



Added some thyme to the onions, plus a little salt and pepper...



Using an oven safe dish, layer the onions and potatoes in...



Add in some brown chicken stock - beef stock would work as well. Also added a few spots of butter...



Ready for the oven - 360 degrees...



After about 45 minutes, they are looking good...



Just to kick it up a notch, I added some Gruyere to the tops, and back in the oven...



Takes a little time, but very easy to make and it's packed with flavour...
