Corned beef hash for two. I mashed some potato, stirred in some butter, added chopped fried red onion, chopped fried corned beef, grated Cheddar and Red Leicester cheese, then fried both sides till it was nice and brown. Served with salsa. I do this about once a year as it might not be the most healthy meal on the planet.....

Salmon with salad and Jalapeno corn meal muffin...



Another night - Hawaiian pizza we made...



Last night was a rotisserie chicken on the barbeque...



Made some gravy with our own chicken stock and some herbs from our garden (they are still holding up well even though it's colder)...



Mashed potatoes, and some yellow beans...

Made this last night...stuffed potato skins. Onions, potato (removed from the inside of the spuds) and some Italian sausage...



Button, Oyster, and Shitake mushrooms...



Once all that was cooked down, it was removed and cooled slightly, then some grated cheese added, plus some parsley...



Baked in the oven covered, with a little water in the pan for about 40 minutes. Then a little more grated cheese on top, and baked uncovered for another 15 minutes or so...



Very good - used cheddar this time and if we make this again, I would use something with a little more punch - thinking Gruyere would be good in this.

Those look amazing. I love a good crunch of potato skins.

Turned some leftover rotisserie chicken into chicken enchiladas...



Adding some char on the veggies...with tomatillos added, and some spices, this will be the green sauce...



Tortillas filled and rolled...



Sauce and cheese on top...



Into the oven, and the end result...



Added some toppings - chopped onions, sour cream, and some good habanero hot sauce to add some real flavour...

Iberico pork collar. Braising it in sherry and stock. Last night I grilled it over the coals and had it over truffled sushi rice and a five minute egg.
