To be clear - these aren’t “healthy”, in the sense that whilst they have great protein, vitamin and mineral content, they are heavily processed and high in saturated fat and salt. That said they are delicious, good for the planet, and so close to meat that meat producers were worried enough to persuade Texas to introduce legislation banning them from being advertised as “meat”. They have certainly found a place in our family’s diet - we’ll always buy high quality steak as a treat and free range meat for Sunday roasts, but honestly, I don’t think we’ll buy traditional burgers again.
Reading the ingredients label was... interesting.

Made our Greek chicken again recently:

Made Carne Vinha D'Alhos (Madeiran pork with wine and garlic) the other night:



Recipe called for pork shoulder, but not having any we used a couple of pork chops - came out a little drier than I would like, but the flavours were very good! Traditionally serviced on a bun...

Chicken in a mushroom wine cream sauce...



Sauce has mushrooms, shallots, garlic, thyme, white wine, chicken stock (which we made yesterday), and instead of heavy cream we used evaporated milk and a little corn starch to make it healthier.



Paired with a salad and some home made buttermilk biscuits (see baking thread) and this was great:
