Chicken piperade with rice. A speciality of the Basque region, on the French/Spanish border.

The best thing about this dish is that it鈥檚 cooked mainly in a casserole - which gives one a good excuse to partake in a libation or two before serving 馃榾

Every year for the 4th I make a red, white, blue themed dinner. Today鈥檚 was spud vide beef short ribs served with creamy mashed potato and sauce made with blueberries, wine and the beef jus.

Nice summer meal...

Tomato and onion pie...staple for us and when you can get good tomatoes, it's very tasty:



Watermelon salad - watermelon, lemon juice, chopped green oinions, Jalapeno, and some Feta:



And a rotisserie chicken - added a spice rub for the last 20 minutes or so:



Wine was my wife's choice - Kim Crawford Sauvignon Blanc from NZ - one of her favourites that I can tolerate...it's actually not bad at all.

Tomato and onion pie...staple for us and when you can get good tomatoes, it's very tasty:

Porterhouse steak, slow cooked in the oven and then pan-seared in a skillet, with butter and garlic. So tender you cut it with your fork. On the side, pureed broccoli with cheddar cheese.

Broiled Salmon with steamed Asparagus.

I spread some olive oil on the Salmon fillets and season with salt, ground pepper, basil, and garlic salt.

Being somewhat healthy after the 4th of July food last night consisting of hot dogs, chips, dip, beer, wine, etc.

For my wife's birthday, she requested jerk chicken. Made probably the best batch to date. Four of us wolfed a bot of it down before I realized I didn't take any pics. Did a side of banana salsa (grilled bananas, grilled onions, dressing w/ rum, brown sugar and mint) and some corn on the cob that got roasted with some olive oil and cilantro. Plus a few brats were in attendance. It was a tasty dinner.

Very simple...

Layer sliced onions and tomatoes in an oven proof dish. We tend to eat a lot of sweet onions, but Spanish or even cooking onions will work.

Drizzle a little olive oil on top, along with salt and pepper to taste.

If you want, you can also add a few small blobs of butter...

Bake for an hour in the oven, and then add in some pieces of bread that have been tossed in some olive oil.

Continue baking for about another 20 minutes, or until the bread is crispy.

Enjoy!

You're in AZ right? I might have to try it next time I am out there for Spring Training.

I used to try to make it out to Durant's each time I was in Phoenix but it seems like the quality of the food has declined over the years.
