To the best of my knowledge, the pillar plate diameter in lignes (17-ligne, 19-ligne) IS the calibre.

I have spare part info for most but not all calibers. The Kreutzer book has a movement identification guide in it. I think it's called "Omega Designs".

I should probably sell mine.

I am afraid such catalog doesn’t exist. Omega pocket watch production lasted for more than 75 years, with probably several hundreds of case references, not speaking about dials and hands...
If your interest is in calibers, A Journey through time or Omega Saga, both written by Marco Richon, are the most comprehensive books you can find. Omega Design, by A. Kreuzer, already mentionned above is also a good reference book.
For spare parts lists, the period catalogs printed by Omega do give a list of spares and their ref, but their only real use is to see if there is compatibility between two different calibers.
Difficult to give you a useful answer without more details on your needs.
