I also dig the sailcloth look on the 300MC, so have some suggestions for you. That price you were quoted by the AD is for the strap and the clasp - it’s the clasp that’s the pricey point. If you want to keep the “sailcloth” look and stay with an Omega strap, the strap for the Speedmaster Dark Side of the Moon will fit:
It’s not sailcloth but is cordura, though. Still looks good. One caution - it will rub against the case and I have noticed that the cordura is already wearing in the places it contacts.
The best sailcloth strap I have found is from Artem (https://artemstraps.com/). These are considerably cheaper and they do have a deployant option that is similar to the Omega deployant but considerably cheaper. For the strap and deployant you would be looking at something like $150 shipped. I only have the strap on the tang, but it is very comfortable and supple. It only took a day to mold to my wrist. It has a rubber backing and is completely water resistant. Here’s a quick snap of it:
