Ok I’m a man of my word, the PB & onion sandwich challenge has been completed. Not bad, I’m a yes on onions kind of guy, at in&out.
Npw as a side note to the PB, I had total disdain to it for pretty much my whole adult life. I eat pretty much anything, this sandwich proofs that. A few years back, I started eating PB again now in a conversation with mom she told me what happened ions ago. One day when I was 3 or so, I ate a whole tub of it don’t recall the event.
Soon I’ll post my wacko childhood sandwich, by the way it wasn’t homemade.

Cheese and onion.

Yes, this would be good. Unfortunately my former boss and I shared a small office complex out in the middle of the manufacturing plant. He would bring in cheese and onion sandwiches, but would also put sardines on them. I ended up forcing him to at least spare me some of the pain of having to smell that by taking the empty sardine can to a garbage container somewhere far away...🤮

Made bacon again and actually made it to the PB sandwich stage this time. 😀 You might notice two sandwiches... my wife supports my watch interest and also supports these new sandwiches (haha), so I made two. In fact, she'll be having the next "PB + ingredient" sandwiches too (onion, mayo, pickle versions).

I took others' comments into account, expecting the PB+Bacon to perhaps be a little dry so I tried to err on the side of not-too-crispy when making the bacon. In regards to cooking method, I'm not much of a cook but have found that this aluminum foil accordion method (pictured below) to work pretty well for making the bacon (baked in the oven). I like bread toasted for sandwiches generally so also did that. The verdict? My wife and I agreed the combination is still on the dry side and this may sound a little nuts but the PB and bacon seemed to cancel each other out. Or maybe more accurately, if we were tasting one, we weren't tasting the other. If we were to make them again, maybe a saltier bacon would work better? Overall though, not a bad sandwich and I could see it being a good option if you could only eat one thing all day long (think maybe a road trip where you don't want to stop more than once), meaning it would probably hold me over a whole day especially if I loaded up all the prepared bacon or a little more PB.

Now, the next one is PB+Onion! As mentioned before, I'm not much of an onion fan so I'm a little apprehensive about it. However, I was delighted to find a Sweet Onion as @Archer referenced earlier. I don't go shopping for onions normally so finding this has given me a small boost of confidence. 😀 Will update once these are made/tried.

The amount of peanut butter is so very important. Less is usually better. Otherwise? Too dry.

edit...The bacon should dominate the flavor profile. Toasting the bread will also change the profile/mix.

Ok to continue with the bacon thread , that turned into a questionable sandwich challenge. Here is my odd, childhood sandwich which I still eat specially when I do endurance races.
It’s from my childhood, but no family member is involved. When we used to visit grandma, as kids we visit the corner store. I don’t recall how, but a sandwich came up and that was the beginning. i usually had with some sort of bakery loaf, Italian, French or anything. But I now regular with bread will do. The ham needs to be salty, sweet turkey stuff won’t do it. The banana most be ripped, but not mushy and last quality mayonnaise (pick your brand) I don’t toast the bread, might work.
That’s it folks...not for the timid haha

BTW, the sandwich looks intriguing. Definitely a good mix of sweet and salty, and not too dry! I may need to try it ...

Updating this thread with an... er... update. Tried the PB and Onion sandwich - not liking onions much (except onion rings, go figure... could be the batter/onion combo) I tried to cut the pieces thin but also wanted to have enough of it in the sandwich to taste it over the PB (thinking back to how I tasted the PB more than the Bacon in the last sandwich). Unfortunately I didn't get the quantities quite right and mostly tasted the onion the whole time. I did have about 3 awesome bites though where it was in perfect harmony and tasted quite good, so I'll take this as something of a win. 😀 Next up is PB and Pickle. Edit: Two sandwiches since my wife is still along for the ride with trying these recipes out.

Oh! That is a good idea... I thought about trying a combination of the two sandwiches (bacon and onion with PB) - but sautéed onions takes it to a new level, and I do have a lot of onion to get through. Adding bacon to the grocery list so I can try this. Thanks for the idea.
