I am just tired of chasing defective vintage crystals and would rather have new crystals installed on all my watches, wondering if it's possible to have only the crystal and/or crown changed?

Nope - they will not sell these parts to the general public.
I don't believe that Omega will do partial repairs, so the only option is to have an independent do it, if they are willing to. Most won't, but you might get lucky.

Bracelets, straps, buckles, spring bars, end links - those are "attachments" to the watch, which Omega will sell. Anything that is actually the watch itself (watch head) they will not sell.
Some authorised watchmakers will do partial repairs though. I’ve had a new bezel spring fitted to a seamaster in the past. A part which was impossible to source anywhere else.
