·Patek does on some of the high complication watches, but not on the "regular" stuff.
This is a photo I took at their factory, showing a selection of the wooden disks they use:
You can see by the size of some that many are for making pocket watches, rather than wrist watches.
Other than that, I can't say for sure who else might be using this technique.
