is there a reason literally any watch could not function OK in zero gravity?

In fact You're seeing two Rolex GMT-watches...
Both Apollo 14 CMP Stu Roosa and LMP Ed Mitchell wore a Rolex GMT ( Mitchell even took two ! )

...might be a Speedy after all ... looks like 1116/575 bracelet ?

Yes, it is a Speedmaster and not a Rolex GMT as many believe it is. The edge of the bezel is clearly that of a Speedmaster and not the coin edge style edge found on the Rolex GMT. Also, look at your Speedmaster from the same angle and you will see how clearly obvious the pushers and crown line up as well as the bottom of the bezel and top of the crystal. I don't think the bracelet is the 1116 because the center pieces on the statue bracelet are too wide but it appears to be an Omega bracelet.

I think it may actually be a real Speedmaster with the features and edges softened to match the style of the statue and bronzed or gold plated.

Here is a picture from above when I saw it at the US Capitol. I can clearly identify the 2 pushers and the crown on the right side of the case.

Another interesting Rolex story; (retired) US Navy Captain astronaut Scott Altman wore a Rolex during 3 of his 4 Space Shuttle missions (STS-90, STS-106 and STS-109)... but it looks like not during his last mission STS-125
However he wore his Rolex Submariner in STS-125 training aboard the NASA Grumman Shuttle Training Aircraft (STA) and in post-flight educational conferences. If T-38 jets were not available, these Grumman STAs were used for transporting shuttle crew members between major NASA sites ...

@SpeedyPhill I have a definitive answer now.

I just received an great email back from George Lundeen the sculptor of the Swigert statue. I was curious if he could definitively say whether the watch was a Speedmaster or a Rolex GMT. He said the watch is indeed a sculpted Speedmaster. The statue is over life-size standing 7 feet tall so the watch itself was sculpted in the same scale as the statue thus larger than a real Speedmaster. I think the detail we see in the bezel edge and the bracelet is a testament to George's skill as a sculptor and artist.

I wanted to put this here for future reference when discussing the Rolex watches worn by Ed Mitchell during Apollo 14. I found this brief conversation that took place in the lunar module between Shepard and Mitchell who wore two Rolex GMT's as well as his Speedmaster for a total of three watches. Sheppard humorously points that fact out to him in the transcript below.

As I mentioned above... indeed a Speedmaster instead of the Rolex GMT he actually wore underneath the spacesuit

Here's what looks like a 1969 photo of astronaut Alfred Worden after a T-38 flight... At that moment he was back-up CMP for Apollo 12 and would fly aboard CSM Endeavour during Apollo 15 in August 1971...
Note the Snoopy figurine sticker on the helmet... At his left wrist a Rolex GMT-master Pepsi ... what do You think 😕
