We bought a new wine rack this week, so here it is stocked up...
In the process of putting the wine in the rack, we realized we have a fair bit of ice wine (20 bottles - 1/2 bottles actually as these are sold in 375 ml bottles rather than 750)...and the oldest I found in my stash is this 1997 Oak Aged Vidal:
Only one bottle of that and I'll save it for a while longer, but I found 2 bottles of this 2003 Pelee Island Vidal ice wine:
So we cracked one open last night for a drink in the evening, and it was fantastic. Vidal ice wine is a straw colour when bottled, but over the last 17 years this one has aged to a very deep caramel colour:
The flavours have intensified over time...dried apricots, peach...it was lovely.
Not something you would drink a lot of, but as a special treat it was very good.
