It's supposed to mean you can get in & out quickly, as in fast food, but jokes abound!

I have an In N Out Burger bumper sticker. Back in the day, people would perform a little surgery on these, removing the "B" from the beginning of Burger and the "r" from the end. If you get my drift......

Mighty good burgers though.

Call me a perv, but I for one love the the In N Out name!

And yes, Dennis that chicken was moist - one of the great reasons ceramic cookers rock! Without a doubt, the moistest chicken I've eaten in my life.

Is the stone box with the fire coming out of it, purely for decoration?

Smoked our Christmas turkey today following this recipe.

Turned out nicely overall - skin got a little crispy but better than it being rubbery from too low of temp. I used a gallon ziplock of ice on the breasts for 30 minutes before putting it on the smoker to slow the cooking of the white meat down and keep it from drying out.

Tonight we had the Primo citrus brined and applewood smoked turkey, a kale salad, green beans and roasted garlic mashed potatoes, all served with a great Oregon Pinot Noir.

Holy smokes Roger (pun intended), that breast meat has AWESOME color!

all served with a great Oregon Pinot Noir.

We went with a California Pinot Noir - 2009 Kosta Brown Sonoma Coast. It changed my opinion of American PN based wines. There was still a teeny tiny hint of green (sage / bay leaf) but only just enough to barely notice it as something that enhanced the finish instead of took it over. I traded a fellow wino a bottle of 1995 Bertrand Ambroise Corton le Rognet Grand Cru for the Kosta, and damn glad I did.

My dad, brother, and I polished off a bottle of 1985 Graham's Vintage Port too. 🥰 Gotta say that I flat out DO NOT want to go to work tomorrow.

Going through the Danbies to select the New Year's Eve wines this week. 2001 Shafer Napa Cab and 2002 Huet Clos Du Bourg Vouvray are the probable starters. Gotta think about it being worthwhile to pop a 1979 Rivesaltes for dessert that night considering there'll be mandatory champagne.

There are some great Pinot Noirs from Sonoma Coast, St. Lucia highlands, and the Russian River Valley in California. Oregon has a much broader range of flavor profiles than CA and we found many up there that were very pricy but were not something we'd drink even at $5.

After a 90 minute fat bike ride in the snow and 14F temps, we relaxed with a glass of 2012 Chappellet Mountain Cuvée and then put together some surf and turf - crab cakes and ribeye - with roasted root vegetables and a kale salad. Nice end to the day.

In and Out Burger. It's a West Coast/California thing
Taste I give Five Guys a tiny edge basically because of the fries but I've yet to see a Five Guys with a drive through window or longer hours. I would gladly accept In and Out in Arkansas.

My favorite burger is a toss up between David's (love yelp review where person complained they brought a vegetarian who was appalled at the meat case duh full name is David's Butcher Boy) sadly Central Arkansas only and The Box with one Little Rock location.

But for fine dining, the spicy chicken sandwich at Chick Fil A is where it is at. The next best chicken fast food is Raising Cane's and Foosackley, sadly neither has a location nearby.

I'm afraid y'all have guilt issues. I wouldn't feel guilty eating most any of the meals posted.

GUILTY PLEASURE

Spam and eggs. About once or twice a year get a craving.
Ro-tel cheese dip. Can of Ro-tel, pound of velveeta.
Andys butter pecan concrete. Vanilla custard with butterscotch syrup and salted pecans all blended together.
Maple bacon cupcakes, sadly the bakery that offered them here has closed.
The deluxe honeybun at Stoby's a cooking marvel, just an iced honey bun with a pat of butter microwaved to melt the butter, reputed to be a dish enjoyed by Elvis.

Those are dishes to feel guilty about.

My wife is Filipino from Maui, so she does get on a Spam kick once or twice a year.
