First attempt at spit roasting a suckling pig. 4 hours on the spit and it was the most tender pork I've ever tasted.

Jalape帽os stuffed with goat cheese and Monterrey Jack with butterflied shrimp wrapped in bacon served with garlic and brown butter pasta and a side salad.

One of tonight's special at the restaurant. Burrata with crushed peaches, heirloom grape tomatoes, fresh peas and rose petals.

Its a Frozen candle. Leftover from my 3yr old daughter's party.

You got daughters?
No daughters......but I do have a son and in laws.....and they just took us on a Disney cruise so the Frozen theme is still ringing in my ears!

I hope everyone had a good Labor Day weekend. Ribs are just about done here. 2.5 hrs smoking, 1.5 hrs in foil, and 1 more hour on indirect heat. 2 slabs dry rubbed and sauced, and one with just the rub.

When I was a young-un, my pops would load up the car and we'd head out to our family homestead in Southern Illinois. Our family of (4) lived in an 800 ft., 2 bedroom apartment in the Bronx and my Grandpa had a 3000 acre farm with a 5000 sq. ft farmhouse. Serious culture shock.

If you've ever been to that part of the country, you'd know that it must be the hottest place anywhere and that includes hell itself. My job was to walk out to the family garden each evening and grab 2 or 3 dozen or so ears of corn. By around 5:00pm, the corn is so hot from baking in the sun that you don't even need to cook it. I was told this is why corn gets so sweet ...Mmmmmmmmm
