What Makes One Speedmaster Model More Water Resitant than Another?

That gets into a whole other mess and the somewhat irrational reason that I'm curious about this in the first place. I always hear conflicting things in regards to water resitance. I hear that 50 meters isnt enough even for wading through a shallow stream, and then from others that 50m is enough to swim with. If it was 10 meters it would put it more in the comfort zone of being able to comfortably tackle basically anything like the occasional swim.

In any case this is all irrational because I never swim with mine anyway. But I have the irrational fear that one day, ill be forced to dive off a waterfall indiana jones style (or something to that end) and my watch wont survive thus leading to NAZI's taking over the world...

Like I said, irrational.

50 meters is 50 meters nothing more to it.
A company makes a watch tests it thoroughly and says it can go to a certain depth.
End of story

Fifty Fathoms: 91m. By today's standards, you could swim but not dive with it. 70 years ago it was the 1st dive watch and used by people like Jacques-Yves Cousteau. Just saying...

Now, I also doubt he forgot to change regularly the seals.

why can’t you dive with it? please advise.

By today's standards?
Because it says a watch that is certified resistant to water only up to 100m is not suitable for diving. The original Fifty Fathoms was certified resistant up to a depth of... fifty fathoms, or around 91m.

So apparently in 60 years, we changed from "1m is 1m" to "you need to add at least 100m to the depth you are targetting". Not sure why... Maybe it is because the meter definition changed twice during that time: watch companies do not know what a meter is anymore.
