The preparation instructions say: fry from all sides. Difficult, but not impossible.

A little beef, pancetta, carrots, celery, onions, garlic (a lot), half a bottle of Rh么ne Syrah, crushed tomatoes, some sage leaves, a healthy does of rosemary, roasted shiitake and mushrooms, salt and black pepper and a bit of cream. Then simmer for 3 hours.

Served with a mash of potatoes, sweet potatoes and garlic.

I鈥檓 lucky to have a tolerant and skilled butcher. This is a 21 day dry aged MB9 equivalent tritip that I reverse seared last night. No more read meat until Christmas!

Pinnekj酶tt, ribs of lamb smoked, dried and salted, steamed for 4 hours and served with mashed kohlrabi/rutabaga/swede, sausage and potatoes. Leftovers from Sunday dinner. Salty and savoury enjoyed with beer and aquavit. Traditional Christmas food from the west of Norway. Not my picture.
