Should I fry my cal. 861 in olive, or canola oil?

No no no! The cam system operating the chronograph functions of the 861 is best fried in oil with unsaturated fat levels of at least 50%. Coconut oil would be my recommendation. If that’s hard to find in your area you’ll probably be ok using a half and half mixture of beef tallow and ghee.

Depends on the method of preparation. For stir frying, peanut oil is preferred. Amateurs… 😀

Obviously grape seed. It has a nice high temp, and is very neutral so no smell when you put it back on your wrist.

Olive is fine for a gentle sauté but if you are going for that carmelized dial, a highly heat oil like canola or grape seed is best.

Since it is a Swiss movement shouldn't it be a local rapeseed or sunflower oil? Proper farm to bench.

Depends on planned cooking temperature, if below 325f/163c then let’s go olive, above I’ll reach for canola. No sunflower, that’s too expensive and only used for PP and the like.
