to be fair, i didn't expect more than $700 or so for it, given the almost mint condition. at $880, i was certainly pleasantly surprised.
but, dammit, who put a gun to his head to make a huge reserve bid that he never had any intention of honoring to the end?
Don't cancel the deal and then when he doesn't pay after 4 days mark him as a non payer. Three of those within 12 months and he's out of eBay for a penalty period, can't remember how long that is but it's a substantial amount of time.

Sorry for your woes my friend but there's another victim in this....the next highest bidder.

I've just took a look at your listing and the bidding activity suggests that this guy was pretty keen on getting your watch.

I'm pretty sure that you can contact this bidder with a 'second chance offer' due to non-paying bidder. This way you won't have to re-list the item, the guy gets his watch and you still get more than you were expecting.

That's the way it used to work anyway. Hope this helps.

I have bought a watch through eBay this way. As second highest bidder who the winner back out, the seller contacted me. I agreed to purchase after we negotiate down the price. This is a reputable seller that we are talking about so I don't hesitate to jump to the opportunity.

I suggest wait a month or so, take new photos before re-listing.
Waiting for a month makes it even worse. People might think the watch was returned. If i see a watch being sold and it's back up after a week, at least there's a reasonable chance the problem was a payment problem as there was no time for the watch to get shipped, inspected and returned.
If it takes too long for the watch to resurface, then it becomes suspicious.

But the best idea of course is to offer it to
the second highest bidder (it's called "second chance" option right?).

eBay is simply a minefield including for reasons being discussed. Caution needed all the time and frustrating, yup. Sorry for the troubles...

Is this a fraudulent example or an an example of shilling?
