Whatever movement hasn't been hacked up by some other "watchmaker" in the past, that isn't all worn out, and that I can readily get parts for.
Sometimes a 55X/56X series is a joy to work on, and sometimes a nightmare. Sometimes a 1010 series is a joy to work on, but sometimes a nightmare. Condition is everything.
If I had to pick the movement that I expect the least issues with, it's the ETA 7750 and it's variants.
