For me having had both in hand at the same time there is no question which is the better watch.

One is a future classic and the other will be forgotten.

do you need to ask which one I prefer?

My watch just shed a little tear 🙁
It’s just my humble opinion, and the market seems to reflect as such.

Harsh! 😎

Seems super difficult to actually find someone who knows the difference. Any good questions to ask?

As stated, the biggest tell is the date wheel, serif v the non serif. Sold date could also help, 'mostly'. Service records, if you're lucky. Having said that, I wouldn't write off all 'C' versions though.
If you find one, post and show here.

Harsh, but fair. I started my collection with a 2500, then after three years added an 8500. Guess which of the two I still have...

Speaking to the OP's questions though, I personally thought the matte ceramic grey bezel on the 8500 was great, visually one of the nicest bezels I've come across. If it was possible to graft the ceramic bezel to an older 2500 (without messing up the height profile) I'd be set. I guess that's one reason why the 2500 liquidmetal carries such a premium these days.

For the record I never stated which I prefer, I just love how everyone assumes it is the 2500...

I mean they are not wrong lol...
