Shame animals have to die for watch straps.
I think in general they are dieing for for food and the leather is secondary. Better to use the entire animal.

Unless your vegan and then my apologies for missing your point.

I have ostrich on my '77 Quartz Seamaster:

Really suits the watch, quite soft and wears well. This one wasn’t too expensive: it’s by Di-Modell and has a perforated padding on the underside. A good option for Summer!

I like ostrich, I even have had ostrich belts, wallets, shoes and a jacket. It looks good and wears well, and is a cross between dressy and casual. I put this Tokyo 2020 'Rising Sun' on an Aaron Bespoke grey ostrich leg with dark red accent stitch and lining. About $210 delivered.

He looks like a modern day Velociraptor - and just as pissed off.
It is not his favourite time of year.... but it could be worse... his second cousin is a turkey ;0)

I need to pick up a new strap or two for some recent acquisitions and I'm thinking about trying an Ostrich strap. Was just wondering if anyone has experience with this material and can tell me how it compares to leather, alligator, crocodile, etc. for wear, comfort, water/sweat resistance, etc. Thanks.
Veery resistant. More than alligator I would say. The comfort depends on the maker I think.

I had these Stingray made for my FOIS and Moonwatch. The chap has a lot of different material in amazing colours and his pricing is excellent.
